The Sourdough Struggle
Just like everyone else, I thought I too could easily make sourdough bread. How hard can it be, right? How wrong I was. Everywhere you look, and everyone you talk to will tell you something different. I felt I had to quit my full time job, just to be able to bake the perfect loaf! Overwhelmed was an understatement.

I stopped listening to everyone, and just starting baking. Dense loaves, pounds and pounds of flour bought, kids complaining, “you’re making MORE bread?!”, I finally figured it out.

If you are just starting your sourdough journey, or you are unsure where to even start, here are some good tips and tricks, for the perfect loaf.

Buy the kitchen scale. I thought I could get away with using volumes of measurement vs. weight. When I finally starting measuring the weight of my ingredients, everything came together.
Starter is forgiving. I have enough kids, animals, plants and other things to worry about. Now you are telling me I have to feed another mouth multiple times a day? False. Feed once a day if starting from ground zero. Once she has matured enough to bake with, usually 3-4 weeks, then she can be stored in the fridge for weekly feedings- if you remember.

The Perfect Chocolate Chip Cookie

1 cup softened butter
1 cup white sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
2 teaspoons hot water
1 tablespoon salt
3 cups all-purpose flour
2 cups semisweet chocolate chips
Directions
- Preheat oven to 350 F.
- Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Add in water, baking soda and salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto cookie sheet.
- Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.
Notes
- This recipe contains too much salt.
